Mom's Peanut Butter Chocolate Fudge

My mother's recipe, so loved by our family. Rich chocolate paired with creamy peanut butter for a melt in your mouth confection.


Prep Time: 30 minutes Yield: Approximately 30 2 inch squares

INGREDIENTS:


4 cups granulated sugar

1/2 cup natural cocoa powder

1/4 tsp salt

1 can evaporated milk

2 tsp vanilla

3 tbsp unsalted butter

1 1/2 cups smooth peanut butter

INSTRUCTIONS:


In large, heavy saucepan, combine the sugar, cocoa, and salt. Stir to mix well. Add in the evaporated milk. Bring mixture to a constant medium rolling boil, stirring occasionally, boiling for 5-8 minutes, until it reaches almost hard ball stage when a 1/2 tsp of mixture is dropped into a cup of cold water it forms a small ball. Take off stove. Let cool to warm, then beat with a wooden spoon, adding the vanilla, butter, and peanut butter.


Butter an 8 inch pan or platter of choice (will determine thickness of fudge). Spread fudge into the pan and cool at room temperature until firm. Cut into squares.
