Pan Seared Avocados

If you've never pan seared an avocado, give this recipe a try. They form a sweet, caramelized crispy crust, with a creamy center. I like to serve these as an appetizer, filled with lemon butter or salsa.


Prep Time: 10 minutes Yield: 4 servings


INGREDIENTS:


  • 2 firm yet ripe avocados, cored, not peeled, cut in two

  • Sea salt flakes.

  • 1 tbsp olive oil

  • 1 tbsp unsalted butter


METHOD:


  1. Lightly salt the flesh side of each avocado half.

  2. In a medium size heavy sauté or cast iron pan, over medium heat, add the olive oil. Increase the heat slightly.

  3. Once the oil is heated and appears to shimmer, carefully add avocado halves flesh side down. Lower heat slightly. Allow avocados to sear for approximately 1 minute.

  4. Add the unsalted butter to the pan and continue to cook for another 30 seconds, then remove from heat.

  5. Use spatula to lift and plate avocados.


These are so impressive, and ridiculously easy to make. Enjoy!
