If you've never pan seared an avocado, this may be the time to do so. Crispy, with a creamy center, I like to serve these filled with lemon butter or salsa.
Prep Time: 10 minutes Yield: 4 servings
INGREDIENTS:
2 firm yet ripe avocados, cored, not peeled, cut in two, sprinkled with sea salt
1 tbsp olive oil
1 tbsp unsalted butter
Lightly salt the flesh side of each avocado half.
In a medium size sauté pan, over medium heat, add the olive oil. Increase the heat slightly. Once the oil is heated and appears to shimmer, carefully add avocado halves flesh side down. Allow avocados to sear for approximately 1 minute. Add the unsalted butter and continue to cook for another 30 seconds, then remove from heat. Use spatula to lift and plate avocados.
