Peach Jalapeño Butter


This recipe uses a high quality peach jam, as ripe peaches are not always available. If adding the jalapeño, adjust the amount according to taste.


Use this delectable spread with sweet and savory foods...try it on grilled meats or slathered on cornbread!


Prep Time: 5 minutes Yield: 2 cups


INGREDIENTS:


1 cup unsalted butter, at room temperature

1/2 cup high quality peach preserves or jam, at room temperature

2 tablespoons powdered sugar

1 teaspoon lemon juice

1/2 teaspoon salt (or to taste)

few drops pure vanilla extract

1-3 teaspoons finely minced fresh jalapeño pepper (optional)


I simply mix all ingredients with an electric hand mixer. You can also mix by hand, or in a food processor, depending on the consistency desired.


For convenience, place the butter on wax paper, roll into a cylinder, and store in freezer. To use, simply cut off the desired amount needed, thawing in refrigerator a few hours.

The butter will keep in the freezer for 2 months.
