Popovers


These delicate, crusty, creamy rich popovers are always a huge hit. It's a wonderful memory how much my mom and dad loved them. For best results, make sure you use a high quality popover pan. We never skimp on the powdered sugar topping.😏 Also try them with my flavored butters.


Prep Time: 30 minutes Yield: 12 popovers



INGREDIENTS:


2 tbsp unsalted butter, melted

6 eggs

2 cups milk

1/2 tsp vanilla extract

2 cups unbleached all purpose flour

1/2-1 tsp salt (I prefer 1 tsp)


An additional 2 tbsp melted unsalted butter, for greasing pan.


Position rack in center of the oven. Preheat oven to 450 degrees. Spray the wells of a 12 cup popover pan with cooking spray, then pour 1/2 tsp of the melted butter into each cup.


In large bowl, using a hand held mixer set on medium speed, beat the eggs, milk, butter, vanilla extract, flour and salt until blended. Beat for two minutes until smooth. Mixture will be thin.


Divide the batter among the greased wells in prepared pan, baking for 20 minutes. Reduce oven temperature to 325 degrees and bake for an additional 15-20 minutes, until popovers are puffed and golden brown. Serve immediately.
