Holiday Sugar Cookies


Not all holiday cookies have to take forever to bake and decorate. These nostaglic, melt in your mouth sugar cookies are a rich treat, any time of year. The sugar used in the recipe is powdered sugar, which creates a pillowy, buttery cookie, truly addictive! I keep a roll in the freezer!


Prep Time: 20 minutes Yield: 2 dozen


INGREDIENTS:


1 cup unsalted butter, slightly softened

1 1/2 cups sifted powdered sugar

1 egg, at room temperature *

1 teaspoon vanilla extract

2 1/2 cups all purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/2 teaspoon salt


In a medium mixing bowl, cream butter, gradually add powdered sugar, beating until light and fluffy. Beat in egg and vanilla.


Sift flour, baking soda, cream of tartar, and salt. Gradually add to the creamed mixture.


Refrigerate dough for one hour, or until firm. Bake as directed below.


Bake at 400 degrees for 7-9 minutes. Cool on wire rack, and decorate as desired.


For shaped sugar cookies: Roll out dough to desired thickness. Cut into shapes with cookie cutters. Place on parchment lined baking sheet and bake as directed.


For round cookies, roll dough into 2 inch balls, place on parchment lined cookie sheet, then flatten the ball with the palm of your hand. Bake as directed.


* Place egg in a cup of warm water to bring to room temperature.


Simple White Icing:


2 cups powdered sugar

1/2 teaspoon vanilla extract

dash of salt

milk, to desired consistency


Mix all ingredients together until smooth and creamy. Frost on cooled cookies.
