Thai Basil Simple Syrup

There is something so seductive about Thai basil. The exotic, spicy flavor, with a hint of licorice, elevates so many cocktails!
THAI BASIL SIMPLE SYRUP RECIPE:
Prep Time: 10 minutes Yield: 2 cups
INGREDIENTS:
1 cup granulated sugar
1 cup water
dash salt
A dozen leaves of fresh Thai basil, washed and hand torn into smaller pieces.
Rind (no white pith!) of 1/2 of a lime
METHOD:
Place water, sugar and dash of salt in small heavy saucepan over medium high heat. Stir to dissolve sugar.
Let mixture boil for 2-3 minutes, then add basil and lime rind.
Reduce heat to medium and simmer for an additional 2 minutes.
Strain syrup, cool and store in refrigerator.
Syrup keeps in the refrigerator for one month. Shake before using.
