I created this drink to celebrate my home city of Huntsville, and the talent and ingenuity of all those who made us The Rocket City. For our cocktail, Huntsville’s own Shelta Cavern Spirits rum meets juicy Alabama peaches. Prep Time: 5 minutes Yield: One cocktail
Special Tools needed:
Muddler
Small fine mesh strainer
Base of cocktail shaker or mixing glass
INGREDIENTS:
1/2 partially peeled small ripe peach, cut into chunks (leave a bit of peel on for more color)
A thin slice of fresh jalapeño, or a few dashes of cayenne pepper
Juice of 1/2 lime
2 ounces Shelta Cavern Spirits rum
1/2 ounce St. Germaine
Plain soda water
Sun Drop soda (Mountain Dew works too!)
In the base of a cocktail shaker, muddle the peach, jalapeño, and lime juice. Stir in the the rum, muddling again.
Place small strainer over a rocks glass. Pour the contents of the shaker into the glass. Allow liquid to drain into glass, using the back of a spoon to press any excess liquid out.
To the rocks glass, stir in the St. Germaine. Add 1 inch of soda water. Stir again. Add crushed or cracked ice, and top with a splash of Sundrop soda. Garnish as desired.
