
This vanilla cake has a light crumb and deep vanilla bean flavor. Versatile and a breeze to make, pair it with your favorite frosting. Try it with a rich fudge frosting, caramel icing, or as my mom would make this...as an ice box cake topped with cherry frosting. A must have recipe for any cake lover!
Prep Time: 15 minutes Yield: One 9 inch 2 layer cake (serves 10-12)
INGREDIENTS:
2 cups granulated sugar
4 eggs
1 cup whole milk with 1 tsp vinegar stirred into the milk
2 tsp vanilla extract (additional flavor extracts may be added)
1 cup vegetable oil
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 tsp salt
VANILLA CAKE RECIPE:
Preheat oven to 350 degrees.
In a small bowl, fork sift together flour, baking powder, salt. Set aside.
In a large mixing bowl, beat sugar and eggs until they are pale yellow in color, approximately 2-3 minutes.
Add in the oil and vanilla extract until well blended.
Add in the flour mixture alternately with milk, ending with the flour.
Flour and grease 2 9" cake pans. Pour batter into cake pans.
Bake for 28-30 minutes or until toothpick inserted in center of cake comes out clean.
Remove cakes from oven and let cool slightly before removing from pans.
Once cake is cooled, fill and frost with your favorite frosting.
For a sheet vanilla cake, use a 13 x 9 inch pan. Bake approximately 30 minutes.
